Koibito Poke was founded in 2018 and is an award-winning Poke restaurant based in Scottsdale, Arizona. Our management team is led by Todd Stottlemyre, a 3 time World Series Champion, and best selling book author.
Each Koibito Poke guest is treated to an individualized "build-a-bowl" experience with many fresh and incredibly nutritious ingredients to choose from, as each bowl can be vastly different from the next including the option to fit any dietary programs: vegetarian, vegan, gluten free, and keto.
We truly feel that Koibito Poke is positioned perfectly to fill the demand created by the general public's ever-increasing awareness of the numerous health benefits of consuming delicious proteins and vegetables in their natural state. Our goal is to set the standard for hospitality and customer service in the restaurant industry.
Our business model features a smaller footprint, a low cost of entry and below industry standards food and labor costs. Right now, there is no national "player" in the Poke space, and we feel like we have all the pieces in place to become that national leader in a very short time.

Koibito Pok’s primary business strategy is that of a successful professional sports team. Our goal is to be persistently resolute to the long-term mutual success of our franchisees. Koibito Pok is dedicated to the highest standards of intelligent investment, and we have strategically created uncluttered restaurant designs that are economically friendly to open and to operate. Our locations are designed to require a low initial investment and should range in size from 900 - 1500 square feet. Our smaller, more efficient kitchens are clean and don’t require a hood or fryer. This allows us to substantially lower construction costs, reduces ongoing kitchen labor and maintenance expense. Individual location investments will vary within the table to the right.*

COMPREHENSIVE 10-DAY INITIAL TRAINING - Your training will cover every aspect of the Koibito Pok restaurant system. Our onboarding program is designed to show you how to efficiently operate every aspect of your new business. You will learn how to promote your business locally, vigilantly protect your menu quality, food safety, how to operate software for scheduling and inventory and use the tools you need to manage the everyday operations and financial aspects of your business.
SITE SELECTION & LEASE NEGOTIATION - Selecting the right site is critical to the success of your business. We will assist you every step of the way to find the best location
in your market of choice and negotiate a favorable lease.
RESTAURANT DESIGN AND LAYOUT - We will consult with you and your architect to optimize the square footage of your space in order to create a layout that not only has great flow for both your customers and your employees but will have the energy and visual appeal that your guests will love to frequent time after time.
MARKETING ASSISTANCE - Our franchisees are trained in Koibito Pok’s innovative marketing, approaches and initiatives needed to attract new and loyal customers.
